She's just barely settled as a "time share" resident of Knoxville, splitting her schedule between here and Los Angeles, but Lisa Soland really seems to be enjoying the native songbirds and even the snow in these parts. I got to talk to her a couple of weeks ago about her playwriting workshop (see the short interview that resulted here), and many published and produced works, including Truth Be Told, one currently being produced in Florida by Mr. Playgirl Centerfold himself, Burt Reynolds. As sometimes happens in these situations, Lisa and I are now Facebook friends, and she captured my attention with first a mention of cinnamon cookies, and then the posted recipe. I can't really consider them California--hey, they involve real butter and powdered sugar, not olive oil and spelt--or even Floridian, which is where Soland originally hails from--no key limes, pecans, or alligator inside. Let's just say they're good, and easy, maybe bi-coastal.
Here's the recipe, pass it on:
Soland's Bicoastal Cinnamon Cookies
Beat 1 cup softened butter, 1 cup powdered sugar, 1-1/2 tsp. cinnamon and 1 tsp. pure vanilla extract with electric mixer until light and fluffy. Gradually add 2 -1/4 cups flour. Form dough into 1-inch balls. Place on ungreased baking sheet. Bake in preheated 400 degree oven for 10-12 minutes. Cool on rack. Sprinkle with additional powdered sugar, if desired. Makes 3 dozen cookies.
