Honey Dressing--How 'Bout Them Bees?

Would that I could write about food all day, but upon occasion I also do some feature writing for the Metro Pulse. One thing that really struck me when I researched local hive losses for  What's Killing Our Bees? is how many local purveyors of honey there are. There's not a huge economic impact in the state--less than $1 million annual sales of honey, but it's a healthy, homey product and it's not that  hard to find. The Market Square Farmer's Market has a regular honey vendor, so do several farmstand stores, like Strawberry Fields, and even the researchers at UT have an apiary and sell the good stuff to fund more hives and education for school kids.

I run out of things to do with honey once I stir it into some herbal tea--I'm not the family baker--but I grabbed this little recipe card thing from the National Honey Board at the Tennessee Valley Fair honey and beekeepers booth. The salad dressing recipe is quite handy, here it is:

Honey Salad Dressing

Combine in a blender or shake in a jar:

1/2 cup vegetable oil
1/3 cup white wine vinegar
1 clove garlic, minced
1/3 cup honey
1/2 teaspoon seasoned salt
1/4 teaspoon black pepper
