It's almost February, which means it's almost crawfish season, which means it's time to start re-perfecting that etouffee recipe. And just in time for this year's crawfish boils comes the exciting news that Tennessee - yes, Tennessee! - is home to a brand-new, just-discovered species of giant crawfish (or, as non-Southern news organizations seem to spell it, crayfish). And we do mean GIANT, as the below picture from the University of Illinois demonstrates:
While the scientific discovery that this was, in fact, a totally new species of crawfish was masterminded by biologists at Illinois and Eastern Kentucky University, the creature itself has been named after Jeffery Simmons, a TVA scientist who first confirmed their existence.
Given that they're, you know, scientists, there's no word yet on how tasty the giant crustaceans are. But I have hope someone will make the trek to Shoal Creek, dig up some, and let me know ....
